Perfect Winter Drink. Hot Toddy With Pu-erh Tea In Two Ways

I like to drink Pu-erh Tea a lot in the winter. The ancient fermented tea from Yunnan always fascinates me with its mysterious character. I like to drink hot toddy in the winter as well, the “medical drink “always brings me beautiful moments in the cold weather.

To combine two of my favorite winter drinks is a magic experience. The Pu’er Toddy can be made as a cocktail ( alcoholic drink) or mocktail (non-alcoholic drink). With touches of honey, spice, and citrus, each drink brings out its own charm… however, they definitely share something in common: heartwarming, healing and loving.

Pu-erh Tea

Pu-erh is a highly oxidized Chinese black tea originates from Yunnan, China. Unlike most teas, Pu-erh tea ages well like fine wine due to the special processes involving microbial fermentation and oxidization of the tea leaves, after they have been dried and rolled. Pu-erh tea can be classified into two types: raw (sheng) and cooked/ripe (shu Cha) based on the amount of processing after the leaves are picked and dried.

Shapes, Flavors & Benefits

Pu-erh is compressed into a variety of shapes. The common shapes are cake shape, bowl shape, brick shape. The one I have is in a classic cake shape, the color is in deep dark brown.

The Pu’er tea I have at home is a Ripe Pu’er ( Shu Cha) that has been specially pressed and processed by prolonged bacterial and fungal fermentation. The aged tea cake has been at my Brooklyn apartment for a few years already. Some times I almost take it as an art piece for home decoration. But every winter, I remember to enjoy this artisan tea as a heartwarming and digestive drink. (This Yunnan Longrun Pu-erh Tea Cake-Caiwei (Year 2012,Fermented, 200g)is perfect for the winter).

The flavor of Pu-erh tea is very versatile, it can be mellow, sweet, sour, bitter, floral, earthy or woody…..the taste changes as the tea ages. The taste of my Pu-erh tea is mellow and smooth with a hint of woody aroma.

I like to drink it with my homemade snacks and also have it for my afternoon tea meditation as well. You can have fun with this tea in various ways and it certainly tastes amazing by adding with honey, citrus, and spice …The mixed tea drink tastes great by itself, of course, you can add a small amount of whisky for a kick as well.

Pu-erh Toddy Mocktail

Ingredients:

  • 1 tsp Ripe Pu-erh tea ( You can substitute it with some premium loose leaf black tea)
  • 2 tsp raw honey
  • 1 tsp lemon juice
  • 1-2 orange peels
  • 1 cinnamon stick
  • 1-star anise
  • 5 cloves
  • 1 lemon wedge for garnish

Method:

  1. Boil the water. (Springwater preferred)
  2. Brew the tea. (How to brew Pu-erh tea)
  3. Add spices, honey, lemon juice and orange peels In a pre-warmed mug or glass.
  4. Top with freshly brewed tea.
  5. Stir and let the mix sit for a few minutes.
  6. Take out the star anise and cloves (optional).
  7. Add garnish, serve hot.

Pu-erh Toddy Cocktail

Ingredients:

All the ingredients above. Add 1 1/2 once Whisky

Method:

  1. Boil the water. (Spring water preferred)
  2. Brew the tea. (How to correctly brew Pu’er tea)
  3. Add spices, honey, lemon juice and orange peels In a pre-warmed mug or glass.
  4. Add freshly brewed tea.
  5. Add 1 1/2 once whisky
  6. Stir and let the mix sit for a few minutes.
  7. Take out the star anise and cloves (optional).
  8. Add garnish, serve hot.
