Summer and fall are definitely my favorite seasons in New York. Besides, summer is usually longer and gives you enough time and space to wonder.  Having an artisan cocktail in the beautiful weather and just enjoying the moment always brings me so much joy. I find myself enjoying some peace of mind through a sip of good drink and a bite of food.

SIDE PIECE is a cucumber infused Wodka vodka, with St. Germain , Velvet Falernum , and sparkling wine. The taste is smooth and refreshing yet sophisticated. The cucumber garnish adds magic to this drink. It is definitely a very delightful summer drink.

Besides the lovely summer drink, I want to share some vegan recipes for summer dinner as well. Simple and delightful cold dishes are perfect for a relaxing summer dinner, normally they go well with cold drinks as well.  Cucumber in cold sauce ; Bean sprouts in cold sauce; Tofu in cold sauce. These three cold dishes are inspired by traditional Chinese side dishes in cold sauce. Garlic is an essential herb for these types of cold dishes. With sesame oil, soy sauce, vinegar, and other seasonings, the mixed cold sauce is full of aroma and flavor. They are normally served on small plates and you can enjoy them as salad or pair them with rice.

Although I am not a full-time vegan or vegetarian, I do appreciate vegetables a lot.  Cucumber and beans sprouts are crunchy and juicy, silken tofu is tender and smooth. Fresh vegetables, herbs, spices work magically together.

Cucumber in cold sauce 

Ingredients:

2 cucumbers

3-4 garlic cloves, crushed

1 tbsp sesame oil

1 1/2  tbsp soy sauce

2 tbsp balsamic vinegar

1/4 tbsp sugar

Pinch of salt if needed

Method:

  • Cut the cucumbers into half
  • Pad the cucumbers few times and chop it into small chunks
  • Add  cucumber chunks and crushed garlic into a big bowl
  • Add sesame oil, soy sauce, balsamic vinegar, sugar and salt into the bowl
  • Mix well and serve

Bean sprouts in cold sauce 

Ingredients:

1 pack of bean sprouts

2-3 garlic cloves, crushed

1 tbsp sesame oil

1/2 tbsp salt

1/2 tbsp sugar

1 tbsp red chili flakes (Patrick powder)

Method:

  • Boil the water in a pot and add salt, add bean sprouts into the boiling water, leave for1-2 mins
  • Drain the bean sprouts, and run under cold water, and drain again
  • Add the drained bean sprouts into a big bowl
  • Add crushed garlic into the bowl
  • Add sesame oil, salt, sugar and chili flakes ( chili powder) into the bowl
  • Mix well and serve

Tofu in cold sauce 

Ingredients:

1 block of silken tofu

4-5 garlic cloves, minced

2 scallions, finely chopped

2 red chili peppers, finely chopped

Fresh cilantro, chopped

A handful of roast peanuts, crushed

1 1/2 tbsp sesame oil

2 tbsp soy sauce

2 1/2 balsamic vinegar

1/4 tbsp sugar

Methods:

  • prepare an empty bowl
  • Add minced garlic chopped scallion into the bowl
  • Add sesame oil, soy sauce, balsamic vinegar, and sugar into the bowl
  • Add chopped red peppers and crushed peanuts
  • Mix well
  • Pour the mixture over the tofu evenly
  • Garnish with cilantro
  • Serve
